A great store cupboard go to, using frozen prawns and tinned black beans, I always keep these ingredients in stock.

Ingredients
100g frozen prawns
50g fat free greek yogurt
120g black beans drained
100g shredded mini gem leaves (I love the heart for the additional cruch it brings)
40g cucmber
1 tsp chopped fresh dill
A drizzle of Sriracha Sauce
Salt & pepper to taste
Method
This is very much a 'how you like it' method. I tend to layer the lettuce and cucumber as a base.
Mix the beans & prawns with the greek yogurt
Season and drizzle with spicy Sriracha sauce.
