Ingredients
100g sweetcure Mackerel
1 tsp olive oil
25g baby corn sliced
50g brown basmati rice
30g sugar snap peas
100g drained tinned chick peas
Fresh dill chopped
Drizzle of hot pepper sauce
Method
Boil the brown basmati until tender (around 25 mins)
stir fry vegetables in the olive oil for a few minutes
Flake mackerel fillets and add to vegetables
Drain the rice and add to the other ingredients
Serve with a sprinke of fresh dill
Drizzle with hot pepper sauce and black pepper to taste
