Sometimes you want something super quick, but also healthy, that's not too filling.....ie before an exercise class! This is a real go to for me, especially as no cooking is required, just a little prep for the veg.
It may seem high in fat, but this is 'good fat' from the oily fish.

Ingredients
2 Sesame wholegrain Rye Crispbread
75g low fat cottage cheese
75g smoked mackerel
100g sugar snap peas
2 slices of cucumber, 4 slices of radish to garnish
Fresh basil or any other fresh herbs
A drizzle of hot chilli sauce
Method
It's an assembly job!
Top the crispbreads with the cottage cheese
Flake your smoked mackerel onto the cottage cheese
Add sliced veg and season to taste.
